cook until bubbles appear on the surface
(approximately 2 minutes).
Add fine slices of banana into the bubbles.
Flip your hotcake with a spatula and cook
other side for a fur ther 2 minutes.
Hotcakes should be golden brown
To make the coulis: Heat all ingredients in
a pot over a low heat until the sugar has
dissolved (5 to 10 minutes).
Flip hotcakes onto a warm plate, pour
over coulis and finish with a scoop of
your favourite ice cream and a dusting of
icing sugar. Enjoy!

THIS MONTH I’M making buttermilk
hotcakes - great for Sunday breakfasts
and especially for Shrove Tuesday, or
pancake day. I use buttermilk because
it has a culture and a slightly sour taste

This recipe makes approximately 8 large
2 cups plain flour
3 teaspoons baking powder
2 tablespoons caster sugar
3 cups buttermilk
75g melted butter
knob of butter
2 ripe bananas
150g caster sugar
squeeze lemon juice
Sift flour, baking powder and sugar into a
bowl and make a small well in the middle.
Crack eggs into a separate bowl and gently
mix with a fork.
Combine buttermilk with eggs and then
pour into flour, stirring as you go.
Once combined, add melted butter and
